Smoky Choriqueso + Hop Tickler Paloma

Happy Cinco De Mayo folks! This year we’ve got you covered with a fully loaded, Hop Tickler-centric episode. Since it’s a holiday we’re giving you a little something extra. This episode features recipes for veggie chorizo queso and a never-before-seen Paloma.

Instructions

Choriqueso Recipe:

  1. Heat the butter in a large skillet over medium heat.
  2. Add the onion, poblano, garlic, cumin, chili powder, and a pinch of salt.
  3. Cook until the onion is fragrant, about 5-7 minutes.
  4. Add the cream cheese and milk.
  5. Cook over medium heat until the sauce is smooth and the cream cheese has melted.
  6. Add the Hop Tickler, and simmer for 3-5 min.
  7. In a bowl, toss together the shredded cheese with the corn starch. Little by little, add the cheese to the warm milk, whisking until the sauce is smooth.
  8. In a separate skillet, warm 2-3 tablespoons of oil and remove veggie chorizo from casing. Sautee 5-6 min undisturbed to achieve a nice crispy texture. Drain and set aside.
  9. When cheese sauce is finished, place in serving dish and top with veggie chorizo and fresh cilantro.
  10. Serve warm with tortilla chips.

Hop Tickler Paloma Recipe:

  1. In a shaker tin with ice, combine SKS Agave and Grapefruit juice.
  2. Shake until cold, and double strain into 2 salt rimmed pint glasses.
  3. Top with grapefruit soda and Hop tickler, add ice to top, and garnish with a grapefruit wedge.

He is passionate about teaching other local chefs on how best to pair Sun King beer with their dishes. He aspires to educate not only the Sun King staff but all of Sun King’s fans with the knowledge of food and beer and why each style of beer pairs so well with various dishes.
