Stewed Apple Breakfast Bowl with Blackberries and Coconut Milk


  • Melt butter over medium heat in a large sauté pan.
  • Add the apples and a pinch of salt and sauté for 1 minute (just enough to coat the apples with the butter).
  • Add the blackberries, honey, cinnamon, and water, and bring to a boil.
  • Reduce to a simmer and allow to cook until the apples are soft and the liquid is absorbed, 15 minutes.
  • Check to make sure there is enough liquid and the apples are not sticking or burning to the bottom of the pan.
  • Divide apple mixture among four bowls. Pour coconut milk over the top and then add freshly grated coconut and granola (if using
