I love peanut butter, but I equally love sunflower seed butter which is why I made these energy balls! They are a perfect snack! I store them in the fridge and pop a couple in my mouth before heading out the door. They have a little bit of carbs, a good amount of protein, and packed with healthy fats. Enjoy!

Ingredients
½ cup organic, gluten free oats
1 cup SunButter
2 tablespoons coconut oil
3 tablespoons maple syrup
2 tablespoons sunflower seeds

Instructions
- Place the oats in a blender or food processor and blend until it becomes oat flour.
- Add the SunButter, coconut oil, and maple syrup, and blend until mixed.
- Transfer to a mixing bowl and fold in the sunflower seeds.
- Scoop out a tablespoon of the sunflower butter mix and roll into a ball. Place on a baking sheet.
- Chill for 30 minutes then enjoy!
