Sweet Potato Mash


*Wrap the sweet potatoes in foil and bake at 350 degrees for 2 hours.
*Chop the onion and zucchinis (or spiral cut for noodles) and heat some avocado oil in a saute pan. Saute the onions until translucent or caramelized then set aside. Heat avocado oil in saute pan again and toss zucchini for 2 min. then take off of the heat and mix with onions.
*Brown ground beef then add in chopped garlic, oregano, cumin, salt, pepper and cans of tomatoes. Mix well and allow to simmer for 15-20 min.
*Allow sweet potatoes to cool slightly then slice open length wise and mash slightly leaving the skin intact. Spoon ground beef into center of potato then top with onion/zucchini mix and place in to go containers. Makes 4 servings.
