Tropical Breakfast Popsicles


Combine oatmeal and coconut milk and let soak for 1 hour or overnight.
Wash and cut up produce. Place oatmeal and milk, spinach, pineapple, lime juice, and honey (if using) in a blender. Blend until smooth. Pour or spoon into popsicle molds and freeze overnight or until solid.

Makes at least 12 popsicles, more depending on size and shape of popsicle mold.

Variation: If you want two toned popsicles, blend all ingredients except spinach in blender, then pour molds halfway full (makes yellow). Add the spinach to the remaining “batter” in the blender, blend and pour in the molds to make a green layer.
