Turnip and Potato Soup with Smoking Goose Chorizo

Turnips are easily one of the most overlooked root vegetables, yet its flavor is so delicious and unique. A delicate combination of woody and bitter, the crisp, white flesh of the turnip can easily be added to mashed potato for an earthy twist on a family classic, or in this instance it is at the very heart of a hearty winter soup. Low in calories and high in fiber, this inexpensive produce is worthy of being featured in every soup and stew.

When paired with the hot, warm flavor and color of the chorizo, this velvety blend of turnip and potato is really brought to life, while the sourdough croutons really give the dish depth and texture. Looking for a vegetarian topping alternative? Why not stir in a spoonful of your favorite pesto? Either finish will compliment the creaminess of the soup.


Chop onions and garlic and sweat in butter until translucent. Chop turnip and potatoes into 1-inch pieces and add to the pan, stirring until edges are golden brown.

Add the vegetable stock and thyme and bring to the boil, before simmering gently for 20-25 minutes until the vegetables are soft.

Fry the chorizo on a high end, and gently break down the sausage into crumbs and set aside. Cut the sourdough bread into chunks and in the same pan, heat the olive oil until spitting before adding the bread. Be sure to turn the croutons over to ensure they cook evenly.

After 25 minutes, add the cream to the stock, stir and simmer for a further 5 minutes. With an immersion blender or a food processor (do in small batches) blend until smooth, return to the pot and keep on a low heat.

Serve the soup with the chorizo crumbs and sourdough croutons, and drizzle with remaining chorizo oil.
