Gotham Greens Vegan Pesto Pasta

Simple, quick and perfect for lunch tomorrow, this vegan pesto pasta salad is perfect for a done-in-minutes dinner or even meal prep for the week. Fresh, flavorful tomatoes cuts through the rich aromatic pesto in a way that’s palate cleansing but also one of those combinations that just plain tastes healthy for some reason —and not in a bad way. And, yes, you can get premade pasta dishes like this one at the supermarket, but this recipe only includes ingredients —even in the pesto —that you can feel good about.


  1. Cook pasta to package instructions. Drain and set aside to cool in large bowl.
  2. Heat olive oil over medium heat, add firework cherry tomatoes and zucchini, lightly saute 5-7 minutes.
  3. Salt and pepper to taste.
  4. Spoon pesto over cooled pasta and mix well.5.Add tomato and zucchini mixture, toss and serve immediately.
