Winter Panzanella Salad

An easy to make and delicious winter salad filled with local seasonal produce, tossed with Amelia’s City Loaf croutons and maple balsamic dressing. This perfect combination of caramelized vegetables, crisp kale and crunchy croutons is sure to beat the winter blues. Enjoy!


1.) Preheat oven to 350 degrees F. Chop bread into large chunks and spread on baking sheet. Drizzle bread with olive oil, salt, pepper and seasoning. Using your hands, toss croutons until well coated. Bake for 15-20 minutes until golden brown. Remove from oven and let cool.

2.) Increase oven temp to 400 degrees F. Toss prepped vegetables with olive, salt and pepper. Place in a single layer on baking sheet and roast until fork tender and lightly caramelized, about 30 minutes.

3.) Whisk together all ingredients for dressing.

4.) Massage kale with olive oil and lemon and transfer to large bowl. Toss the roasted vegetables and croutons with the kale.  Drizzle with vinaigrette and serve immediately.
