Memorial Day Weekend is right around the corner! It is the unofficial first day of the summer and usually filled with lots of cookouts and time outside. Here are two of my all-time favorite side dishes and a new favorite dessert recipe that uses local, organic rhubarb! Enjoy!
My family’s absolute favorite pasta salad! Once the air turns warm, we make this salad weekly. And, if we are going to a cookout, we are bringing this as our contribution! I like to make a double batch so we can eat leftovers for lunches throughout the week.
Another excellent cookout side salad! Light and refreshing and it contains a variety of textures in a flavorful basil oil dressing. It is quick to put together and a definite crowd-pleaser!
Besides the amazing flavor, the best thing about this recipe is that they are bars and not a pie! I never want to make a pie, so instead I will often make a cobbler or crumble. These bars are easier than making pie and perfect for a cookout/party because they are cut into individual servings.
